Prep time: 10 min | Bake time: 12–15 min Ingredients • 1 cup (100g) organic oat flour • 1/4 cup (20g) unsweetened organic cacao powder • 1/2 tsp baking soda • 1/4 tsp sea salt (I used Maldon’s) • 1/3 cup (75g) organic coconut sugar (Madhava) • 1/4 cup (60g) melted grass fed butter • 1½ tbsp A2 grass fed or raw milk (or half and half) • 1 tsp organic vanilla extract (in glass) • Optional mix-ins if you love chocolate: • 2–3 tbsp cacao nibs (make sure high cacao %) • 2–3 tbsp mini chocolate chips (make sure high cacao %) Instructions 1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. 2. In a medium bowl, whisk together: • Organic at flour • Organic Cocoa powder • Baking soda • Sea Salt 3. In another bowl, stir together: • Melted grass fed butter • Organic Coconut sugar • Half & half or A2 GF milk • Organic vanilla extract 4. Add the dry ingredients to the wet, stir until a dough forms. 5. Fold in cacao nibs, chocolate chips, or both if using. 6. Scoop about 1 tablespoon of dough per cookie onto the sheet. Flatten slightly with your fingers or the bottom of a glass—they won’t spread much. 7. Bake for 12–15 minutes, until edges are set and crisp. 8. Let cool on the pan for 5 minutes, then transfer to a wire rack—they’ll crisp up as they cool.
