Pork belly may just be my new favorite cut of pork. I made this dish using whatever I had left from my last grocery haul, and it turned out pretty exquisite. A good reminder that you don’t always have to follow a recipe to a tee. Grab some real ingredients, throw them in a bowl, and hope for the best. 9 times out of 10, it’s going to turn out solid. And sometimes those random meals end up being the best ones.
