For generations, this was one of the most valued cuts on the animal. It comes from the shoulder, one of the hardest working muscles on the cow. Because it's constantly in motion, it's full of connective tissue and incredible flavor. Give it enough time, and that tough cut transforms into something unbelievably tender. Everyone rushes to buy expensive steaks while one of the most flavorful, affordable cuts sits untouched at the butcher counter. Sometimes the best food isn't the most expensive. It's the one we've forgotten how to cook.
